Make It Work

I had a "make it work" moment with dinner last night. Goal: clean out pantry/fridge items. Made mac and cheese with flax milk, ricotta cheese, half and half, butter, almond flour, honey mustard, mild cheddar, garlic salt, pepper, and gf pasta. It was creamy amazingness. Even with the handicap of gf pasta.

Yes, I risked breaking out in head to toe hives to eat a bowl. Mac and cheese is my comfort food and yesterday I needed to indulge. The back to school schedule and transition is exhausting. I doused myself in "lempepender" * and so far have been hive free.

I googled mac and cheese with half and half and adapted this recipe:
