Delectable Dishes

These three dishes have been a hit with my boys. They are three dishes that are new to us in the last three months. I adapted them all to be gluten free so that I could make them without being poisoned. So where I used gluten free flour or oats, just use regular flour and oats. And the main key here is they are easy peasy to make.


Oatmeal Muffins

2 eggs
1 tsp vanilla
2 cups applesauce
1/2 cup honey
2.5 cups of rolled oats
2.5 cups of flour (I use Pamela's Pancake Mix)
1/4 cup flaxseed meal
1 Tbsp cinnamon
3 tsp baking powder
1 tsp salt
2 cup milk (I use rice milk and eyeball the amount needed to make the batter consistency I'm looking for)
1 cup of blueberries
1 honeycrisp apple

350 Degrees
Mix eggs, vanilla, applesauce and honey. Add oats, flax, cinnamon, baking powder and salt. Add milk. Add fruit. Pour batter into cupcake pan. Bake 30 minutes.


Bacon Wrapped Eggs

 I use a silicon cupcake pan. Wrap uncooked bacon around the edge of the cup. Crack an egg in the middle and add salt and pepper. Cook for 25 minutes at 375. Scoop out and serve. If you like your bacon crispy, pre-cook it. I like easy peasy so no pre-cooking for this girl.


Fruit  Crisp

I adapted it to fit what I have on hand.

2 10oz bags of frozen cherries
2 tsp vanilla (as called for on the Betty Crocker Gluten Free Vanilla Cake Mix)
cinnamon
lemon juice
Box of Betty Crocker Gluten Free Vanilla Cake Mix
1 1/2 sticks of butter

Thaw fruit. Butter a 8 x 8 pyrex. Pour fruit mixed with lemon juice, cinnamon and vanilla. Pour cake mix on top. Pour melted butter on top of cake mix.  Cook for an hour at 350*. Serve with vanilla ice cream. We used gelato.
