15 minute Mac & Cheese in a pot

Mac & Cheese that only takes as long to make as pasta. Yes please! On my Jovial GF pasta box, I saw this recipe and tried it last night. I'm not easy to please when it comes to mac & cheese. I like it tasty but not too rich. This recipe nailed it. Easy and not time consuming and the right balance of flavor. I'm craving it again today and have no milk on New Years Day. It seems to me that I can do without going to stores until they are closed and then I absolutely need something from the store. 



Ingredients:
2 cups milk
2 cups water
2 Tbsp butter
1/2 tsp sea salt
1/4 tsp. paprika
1 1/2 cups grated sharp cheddar cheese
1/2 cup grated parmesan cheese
*I didn't have parmesan cheese so I just did 2 cups of cheddar.

How to cook it:

  • Slowly bring water, milk, butter and salt to boil.
  • Add 12 oz of pasta, stirring until the water and milk come to a boil again.
  • Adjust heat to keep a slow steady boil, stirring occasionally. Cook pasta for 10 minutes.
  • Turn off heat and stir in cheeses and paprika.
  • Let stand a few minutes before serving.

  1. I make this a lot! And i love that you can have mac n cheese without all the nasty chemicals and preservative that you find in the box. I like to do half sharp and half gouda...but it turns out pretty rich, so you might not like it. :)
