 I made them last night and there is only one left.
We were given a bunch of muffin recipes for Christmas and this one has proven to be a favorite by 3 out of 4 in this household. My littlest refuses to even try one. I've made it a few different ways and I have landed on my favorite. And as always, I make mine to suit my ridiculous amount of food allergies. So play the recipe like jazz to suit your needs.
Ingredient List:
2 mashed ripe bananas
1/2 vegetable oil (I use Organic EVOO)
1/3 cup milk (I use raw milk)
1 tsp vanilla
1 egg
1 1/2 cup flour (I use Cup 4 Cup rice flour)
1/2 c sugar (I've tried it with applesauce and it's acceptable, I just prefer to use org. sugar. Try honey, I can't it's another one of my allergies, for another substitute.)
3 tsp baking powder 
1 tsp salt
1/2 cup chocolate chips (I use Enjoy Life mini chips -- allergy free)

Beat banana, oil, milk, vanilla, egg and then add the dry ingredients. Bake for 20 minutes at 400* until you have golden brown tops.
I like to use a giant muffin tin of six for these delectable treats.
